these sorts of machines squick me out. how do they avoid getting Fiberglas dust -everywhere-?

Big, noisy, expensive, vacuum cleaner attached to the milling head in the case of the LPKF... Ideally, most of your dust is COPPER rather than fiberglass, but an advantage of such a machine (over, say, laser-cutting resist followed by conventional etching) is that you can also cut your PCB into complex shapes really easily. Here's an example:
