I've gotten through the Mac setup for the microcontroller instructions for the MiniPOV. I went with Option 2: OSX-AVR. The idea that I can make and program my own electronic doohickies is very exciting.
I'm a little stuck on how to program the MiniPOV. I have just downloaded all the software, now I need to program the thing. I have a USB to Serial adapter that I bought through Adafruit, can I use that to just plug the MiniPOV into my Mac? What's this "header" thing and Why do I need a "programmer"? I thought the Serial port was so you could bypass that?

sounds like you've been gathering data from too many sources. the usb-serial adapter will suffice to program the minipov-3.
and avr-libc should have hitchhiked in with OSX-AVR.
