Sooo.... excited 7 year old unpacked the miniPOV kit prior to designated assembly hour and location. Result: missing 4.7K resistors and Zeners. I managed to scrounge up some 4.7 K resistors (that are 10% tolerance, so they meter out as 5.0K resistors), and need to pick up the zeners. I see Radio Shack sells 5.1V Zeners. Will these work, or do I really need the 5.6V zeners. Also, will the 300 ohm difference in the resistors make a difference?

Those components should work fine. You will not notice any difference in the LED output from the slightly higher resistance. And the 5.1v zeners should still clamp the RS232 voltages at valid TTL levels.
