The Mintyboost is honestly a very good beginners kit, it was my first electronics hobby project. It should only take you half an hour to assemble, you don't even need many tools. I used a $10 soldering iron not unlike what my old high school used and a set of "helping hands" to hold the PCB. Just take your time, read the instructions 3 times before you even pick up your iron and remember to always check twice, solder once
