I ordered spoke pov RED, can I replace red LEDs with green ones?

If you want to install green LEDs, you should replace the resistor networks RN1-RN8 with 68 ohm parts as shown in the parts list: http://www.ladyada.net/make/spokepov/makespokepov.html

Any common 5mm green led should work fine.

how many MCD should my green LEDs be, so 2x AA batteries could support it

The AAs will drive any 5mm green LEDs. So get the brightest ones you can find.
