I am building a 3DOF Hexapod and I am using the Adafruit 16-Channel 12-bit PWM/Servo Driver.
I want to use a 7.2v NiMH battery to power the servos, but the driver spec says that it will only take 6v max.
Will it work?

Nope. Applying more than 6v of supply voltage to the PCA9685 will burn it out.
Your best bet would be to use one of these: http://www.adafruit.com/products/1065 or one of these: http://www.adafruit.com/products/1385 They're both efficient step-down converters that produce 5v output. The first one can deliver 1A of current, the second can deliver 3A.
