The lesson states you should use a 10K potentiometer (R104) and a 100 ohm resister. In my starter pack, I have a 1K and 100 ohm (R103 and R102) potentiometer.
Can I use the R103 for the tutorial? Do I need to compensate for the difference with a 1k ohm resister?

You can use the 1K pot and the 100K resistor. The LED won't dim quite as much and the answers to the resistance calculations will change.
The 100K resistor will still protect the LED from getting too much current.
