I have purchased both the motor shield and the step motor with the five wires to a plug from adafruit.
I have tested the wires and reached the conclusion of which wire is which but when I try to wire it and use the sketch from the tutorials here the motor moves very, very slowly and with almost no torque at all. I suspect I have read the wires wrong. Would someone be able to tell me which wires on the stepper motor go to which pins on the v1 motor shield?
I have, from the left, red, orange, yellow, pink and blue. thanks.

Which of the 5-wire motors are you using - the 5v or the 12v version? And what power supply?

To use with the Adafruit Motor Shield, connect red to ground (middle), orange and pink to one motor port (say M1) and blue and yellow to the other motor port (say M2). So in order, thats: orange - pink - red - blue - yellow.
