What heat shrink should I use to seal up the PCB so I can offer some protection from ESD or water?

Heat shrink alone won't make it 'waterproof', but will give you some protection against spashes or drips. Just about any heat-shrink of appropriate diameter will do.

Well, humidity and moisture I should have said. Thanks though! I found a source that will sell me small lengths of the right stuff.

There is also 'conformal coating' that cones in spray cans for small projects (or cans for bigger ones).

I got a few 10 foot strips from buyheatshrink.com. Later on I'l get a roll, and after that I'll take the rolls label and price check.
