I suspect a bigger problem with any kind of sealed storage for bread, vacuum or otherwise, is that you need air exposure to maintain the crust. For sandwich style loaves, or if you plan to toast the bread, this is likely less of an issue. For any crusty bread though, what I've always read is that you want to keep the cut end covered, but leave the rest of the loaf exposed to air.

Thank you flink but I'm not looking for pressure forming, 'cause that's what you are referring to, I am looking for controlled vacupressure chambers via electronic control systems, that isn't what you were referring too, but thank you for the assistance anyway.
