How hard would it be to modify the Ethernet Shield to support SFP modules?
I'm working on a project where the Arduino would be installed in a cabinet with 480V 3Phase AC power. I can't bring low voltage (Ethernet) out of the cabinet. A Fiber Ethernet connection to an SFP would be perfect.
I also need to find some optic couplers so I can link Arduinos between cabinets via fiber. Arduino1.DIgital10 -> Arduino2.Digital10 so I can send signals between the two.

You could look at SPDIF as a solution, they are just LEDs and phototransisitors in a plastic housing ready to plug an optical audio cable into, and are good to several MHz of bandwidth.
No idea how viable replacing the magjack with something optical on an ethernet shield would be, those things tend to be pricy and have lots of pins on them.
