Connecting Arduinos
Let's say you needed more pins. Is it possible for an Arduino to be connected to a whole bunch of sensors, and then send the data to an Arduino thats controlling the motors?

Yes that's possible and depending on the type of sensors there are port expanders that will allow you to read more than one sensor with just one pin.
