I have a quick technical question. Would I be able to control 3 servomotors, 1 solenoid, and receive data from a couple of flow sensors using XBee (via wifi)? If it is yes, then which model would I need to get (S1 or S2) and what are other items besides the XBees would I need to purchase?

There is one xbee that uses wifi but most just talk to other xbees. You would need a micro-controller, a battery, transistors for the solenoid, adapters for the xbees, xbees, and a protoboard to wire all this up. OH and wire.
