Thermocouple amplifier MAX31855 Breakout Board (MAX6675 update) - help

Hello, I am looking to buy the thermocouple amplifier MAX31855 Breakout Board (MAX6675 update) and I wonder if the thermocouple selling for you, this or this link in the MAX31855 thermocouple amplifer goes up to 1000 degrees Celsius (temperature of Brazil). If not, what would you use the thermocouple with the thermocouple amplifier MAX31855 Breakout Board (MAX6675 update) to measure 1000 degrees celsius?

Any K-type thermocouple will work with the MAX31855. But to operate at that temperature, you need a special probe with ceramic insulation. They are available from Omega: http://www.omega.com/ppt/pptsc.asp?ref=XC&Nav=tema06

can a K type thermocuple read below zero ºC temperatures accuratly ?
I need to go till 77 K liquid nitrogen

thanks a lot Driverblock :) (im such a fist time user of this stuff)
So I have another question maybe you know the answer,
If I buy a thermocouple, a Max31855 chip and I upload to the Arduino Uno the Adafruit library, do I have to somehow calibrate the thermocouple ? or is it ready to use because of the software buy adafruit ?

All thermocouples need to be calibrated against a reliable reference temperature. Omega has some good white-papers on calibration techniques.
