Using Audacity to convert trouble.

Hello,
I was following the steps to convert the sound file with Audacity but they have changed the interface to the program. I can not find Project menu for " Project -> Quick Mix" step. I've looked in the program and can't seem to find Quick Mix choice any where.
Really don't like iTunes on my computer seems to slow it down when it is. I did see an old post about Sound eXchange software, I might give that a try.
