Motor shield V2 with low voltage stepper

Dear Adafruit,

I ordered two stepper shields and I happen to have a few of these steppers laying arround and I was wondering whether they would work, or what is needed to make them work. In the description of the motor shield it says that most low voltage motors won't work. Why is that?

Low-voltage motors work best with a current-limiting 'chopper' drive:
