I would like to monitor my water well, it is a 240 VAC @~12 amps pump. Could this be monitored? How would I go about doing this with the XBee? I also would like to count the times the well started and stopped in a giving time period.

Google 'current transducers'. these devices will convert current flow to a value you can read with a micro. There are also people doing 'power monitoring' another good Google search term.

You could do this fairly easily with two KAW meters. It would require some custom wiring to make it work:
Each 120V power leg would go through a seperate KAW (split the neutral to go through each) and then recombine them into a 240V plug. That way each KAW is still only monitoring 120V.
The software would need to be modified to add the two together, or you could simply do this in post processing.
