Can I simply attach a thermocouple to an adafruit xbee adapter and use as a general temp sensor?
(Sorry for the newbie question. I've searched and it all seems like people interface arduinos with them)

The thermocouple amplifier communicates via SPI. http://www.adafruit.com/products/269 the XBee just has simple analog & digital inputs.
To do a remote temperature sensor with the XBee, you would want a sensor with analog output like the TMP-36 http://www.adafruit.com/products/165

Or if you're set on using a thermocouple just add an Arduino or something with an ATmega chip with the Xbee. That way TC-->Atmega-->Xbee
