Made an attempt to install download for I2C & SPI on my MAC
the tutorial suggested to remove the old LiquidCrystall library that came with the IDE
can't seem to manage that - or even find it?

The Arduino app on your mac is actually a "package". If you right click (or Control-Click) on the app icon, a pop-up menu will appear. Select 'Show Package Contents'.
This will open a finder window showing a folder called 'Contents'. Open that folder and continue down through Contents:Resources:Java:libraries. The LiquidCrystal library folder is located there.
