Hi,
I've recently been working on a project that will use an Arduino Mega 2560 and TFT Touch shield. In particular I didn't want to use the Arudino IDE for various reasons, rather the gcc toolset (with Eclipse). I couldn't find a complete reference for a tutorial that was up to date and which actually worked for me.
So I went ahead and created a tutorial on my website. The first part covers the basics and then the second part covers creating an application to use the Adafruit TFT Touch Shield.
