Working with the 16x2 LCD Kit

I purchased the Adafruit RGB Positive 16x2 LCD+Keypad Kit for Raspberry Pi http://www.adafruit.com/products/1109 and was able to get it connected and working successfully however using it results in losing easy access to all of the GPIO pins. For my project I wanted to be able to use this display as well as attach a thermocouple (using the MAX31855 amplifier http://www.adafruit.com/products/269) to the RaspberryPi. The stacking header pins do extend through the plate the LCD is mounted on however they all have solder on them so attaching anything else to these pins doesn't seem feasible.

Is there something obvious I'm missing here, or perhaps another product that is available that will allow me to use this LCD display while still being able to attach other items to the GPIO pins?

You could put this http://www.adafruit.com/products/1658 on them to extend and have fresh contacts. You could also get these: http://www.adafruit.com/products/824 If you're working with a breadboard. There's also the cobbler...
