Can I use the T-Cobbler such that I put a female header on the board instead of the male, plug it into the Pi and have the base of the T soldered to another board? I'd have both boards mounted to a base, so flex shouldn't be an issue.
Alternately, does someone sell a really short (< 1 inch, ~2cm) cable that could be used to connect a Pi to an adjacent board?

Absolutely, yeah. The female header goes on the underside in that case (unlike the male header, on top).
