I would say yes , but before this I have to figure out the circuit

Yes. A fuse is a good idea. But it would be to protect the speed control first and the motor second. According to spec, that motor can draw more than 100A in a stall You would smoke the MOSFET in the speed control before you would burn out the motor.

Ok , I m really lost here and I don't know where to start ,
So
I will need a 40a fuse or maybe 35a ?
Would I install it at the source of the transistor ?
But I still need to buy the rc system as well it I will look at the system later on ,

Yes. 35 or 40A should work. It can go anywhere in the battery/motor circuit. The easiest thing is probably an in-line fuseholder on one of the battery leads.So

i am thinking in staying in this hooby for a long time as i always loved RC ...
But i love the cars, boats, airplanes and everything else....

HiTec and Futaba are two of the better brands. For your truck, you probably want one designed for "surface" use:

Some of my model boats are powered by 4x 12v car batteries, or 6x 12 volt motorcycle batteries.
You can buy the right parts off the shelf without any issues. As Adafruit don't see anything similar that completes, I hope it's OK to suggest that you look at MTronics who make fantastic equipment which will easily handle you're load.
Expect to pay around 40 euros.
