Solar Panel output->BUCK converter->lipo charger

I have two 5.5V, 540mA solar panels that I would like to use with https://www.adafruit.com/products/390. The product description says that a 6V solar panel is recommended. Can I wire the panels (series or parallel?) and use https://www.adafruit.com/product/1385 to ensure that the charger receives a constant 5V?

I don't think you need the buck converter. You can probably just wire the panels in parallel. If one or the other panels might get shaded, you may want to use blocking diodes to protect against reverse current.
